Yes, Damien, that's right.
There are two ways:
Either you can put QWS into Record and press buttons on your synth to send
the dump, then save as .SYX.
Or, you can make two tracks in QWS. Write a Dump Request message into the
first track, then go back to start and Record on the second track. Then
delete the first track and save as .SYX. This second method requires no
button pushes on your synth, but does require you to manually input the Dump
Request message, which you would have to work out from the synth manual.

I'm sure one of the experts will correct me if I am wrong, but I believe
it's as straight forward as recording it as you would an ordinary track
for however long the dump process takes, then saving it as a .syx file so
you get the raw sysex data.

It's been a few years since I've done anything with QWS. Today, I have a
use-case. I need to send a Sys-Ex dump from my Ensoniq TS-12, including
all programs and sequencer memory. Having read the TS-12 manual's
section on this, this looks like a pretty straight-forward process from
the keyboard side. What steps are necessary to store Sys-Ex in QWS? I've
only ever used it to send Sys-Ex out to another device.
