This has been discussed on the list many times, so you might check the archive.
However, the simplest thing to do is just use an AcctLogFileName to log to a
local file. See section 6.14.4 in the Radiator 2.16.1 reference manual. There
are other possibilities, but which to choose depends on your exact requirements.
