What kind of phone is it? Mobile/cell - in which case does your phone have a always or sometimes on wifi connection?
or Home phone - in which case is it a wireless/cordless DECT type? Although wireless interference is a definite possibility, if it's a mobile causing the problems it might also be an IP conflict. If your Touch and your phone/laptop have the same IP address - one can force the other off the network.
