I'm limited to 100% grass fed cheese, which makes an amazing, rich cheese 
but is hard to find. Fortunately, more and more artisan makers are 
understanding the health and flavor benefits for the herd and the customer. 
There is at least one producer in Durango, CO, and I'd love to be able to 
visit them someday.
