Patrick,
         Flipping eggs is a fluid motion, gently work the pan in a slightly 
downward arc away from you at at the outermost point of the arc, give a gentle 
flip while returning the pan back towards youto catch the airborne omelette. 
Be sure to make sure the contents of the pan are loose and you can gently shake 
the pan and see the omelette (or other contents) slip and slide around the pan. 

You can practice with a skillet and a handful of dried beans. 
Once you are no longer spilling beans all over the floor, move on to food. 
You can also practice with a tortilla, once you get the hang of it, you'll be 
flipping most things with out utensils. 

The shape of the pan helps too. 
My egg pans are old thin carbon steel with flared sides.
