I've done the 1x9 on the San Marcos:

1x9 IRD extra wide cassette (12-40)
Shimano 105 crank w/ 38t Wolftooth No-drop chain
Shimano 105 derailleur w/ Wolftooth "Road Link"
Shimano Ultegra bar end shifters in friction

I found the 1x9 gearing easy to shift, but the gaps were a bit too much. 


So I went with a 1x10 on a Box Dog Pelican before giving it to my girlfriend

1x10 Sunrace Cassette (11-40)
Sugino crankset with Wolftoof 40t no drop chain on the "inside" of the 
110bcd arms
Shimano SLX 10 spd rear derailleur
Gevenalle GX - Shifters, I got the short pull version

The Gevenalle shifters use the microshifters that are for 10 speed Shimano 
MTB rear derailleurs. Index flawlessly, and have a larger throw so friction 
is also easy (YMMV). Very no-fuss set up.
