if you ever want to "gofast" or "tour" - yeah, you should probably get
used the drops.   but it's a little concerning that you're describing
that set-up as twitchy and hard to reach the brakes.  is this your
first bike with drops?  are you feeling too stretched out?  you may
need to experiment with bar height and different stems.

anyway, sounds like putting bullmoose bars on the bleriot is going to
give you the same bike that you have with the hillborne.

and as David notes, the bleriot won't have more standover if it is
sized comparably to the hillborne.  in fact, seems like you should
have more standover clearance on the hillborne - not less - given the
sloping top tube.
