I suggest you try it first to see if there is actually a problem. I have 11-speed chains/cassettes on multiple bikes, and have never purchased an "11-speed" crank. I've used cranksets intended for use with 8-speed chains (eg Deore XT M737/739) and those intended for 9/10-speed (eg Sugino Alpina2) with 11-speed chains/cassettes, and have had no problems at all with the chain falling between chainrings. The only cranks where I've had that happen were with cranks using TA Cyclotouriste chainrings and spacers, and I fixed that problem by reducing the spacing between the chainrings. Explained here: https://groups.google.com/g/rbw-owners-bunch/c/0klJAJh-KhU/m/mZJ7e5TcAQAJ. I've found that the same fix works fine for 11-speed chains as well as the 10-speed I was using when I wrote that.
