I have a Rambouillet and an Atlantis. The Atlantis is a work horse that can haul a load and is fun to ride unloaded. I have ridden 200k brevets on it when my Rambouillet was out of commission. The Rambouillet feels more lively when unloaded and will always be my first choice for unloaded riding. I have even done Inn to Inn touring on the Rambouillet bike. I currently weigh 210, have been as high as 230 and as low as 200. I have not been disappointed by this bike.
It is my understanding that the Hilsen tubing falls in between the Rambouillet and the Atlantis. I think given your description this is the bike you are looking for. I will offer this, if you aren't sure call Rivendell. I have found that they are very good at matching bike and rider and they won't steer you wrong. Larry Powers Get a bicycle.
