I'd use Joe's operation - he's a Riv rider and great all-around guy. Ride to Velo Cult - they don't rent bikes, but they'll be happy to let you use a Xtracycle to do errands.
For routes, I'd check out the San Diego Randonneurs Permanents -- especially some of the sections that wind through Rancho Santa Fe and if you can get out to the mountains, you won't regret it one bit. http://www.sandiegorandonneurs.com/permanents.html The fire road (Nate Harrison Grade) up Mt.
