I never do -- I remove my wallet and camera, but that's about it. I never 
leave my bike with saddlebag for more time than it takes to pop into a shop 
or have a meal on a long ride, and try to park in plain sight. I've done a 
fair amount of fully loaded touring, and have not had issues with bags or 
panniers -- then I take my handlebar bag with me, and if in a big city try 
to find someplace secure to park my bike -- the lobby of a building, a 
cafe, etc. So far, so lucky!
