Cause it separates the men from the boys. :)

Doing comes purely from tradition, but it's certainly possible to  
play just as well with a traditional grip as it is matched grip so  
there's no real reason /not/ to do it. I always played traditional in  
marching, but matched on a drum set in jazz band. Unlike Geoff,  
however, I always play crossed over (right hand on hi-hat vs left and  
left hand on snare vs right -- which is also traditional).
