Can someone please point me in the direction of some REAL
documentation for how to "properly" build redhat-based multi-disk
installation images?

My specific aim is to create install disks with all the updates in
them. (Redhat 7.1, and soon for 7.2).

The specific problem I'm running into is that when I create them,
the installer ends up asking to swap between the disks during the
  installation. Yeech! :)

There's obviously some magic that needs to be done with using
genhdlist, but I suspect that it is more than that... it appears
that anaconda needs to be used to organise the contents of the
RPMS/ directories, but real documentation is very hard to find.

Many thanks.

Cheers
Tony
