Openoffice and Mozilla have to be run in X mode and I'm afraid
there's no way to change this.
OTOH, some of the apps that Red Hat distributes are text-based:

links (a web brower), mutt (the best mail reader of all), slrn (news reader)
ncftp or lftp (ftp clients), etc...
