syslog-ng provides a very fine grained way to filter log messages.
my syslog server seperates files into files like

pop3.log
imap4.log
ups.log
printer.log
switch.log
mail.log
cron.log
vpn.log
inetd.log
lpr.log
kernel.log
database.log

etc..
