If you have defined 16 or 32 colors with Xconfigurator
you can change the color depth by issuing the command
startx -- -bpp 16 for 16 colors
startx -- -bpp 32 for 32 colors
if you get an error your hardware does not support them.

Adding the line
DefaultColorDepth 16
(or whatever depth you want) to your XF86Config file does the trick.

int the docs somewhere, but I got this from this list a while back.
excerpt from my own XF86Config:
