You could use the virtusertable feature in sendmail to do this  i.e

user@domain             user
user2@domain            user2
user3@domain            [EMAIL PROTECTED]
@domain         spillage-box (or postmaster, root or whatever)

be careful not to double up with things in the alias file though....
