Well... Unfortunately, I don't use UW-IMAP, so I'm not sure how that 
package is configured.  I believe that the Red Hat packages include 
scripts that use 'openssl' to generate a self-signed certificate.  You 
should be able to use those to generate a self-signed cert with the 
correct information (CN, contact, location, etc).  If you then want to 
have it signed by a recognized CA, you can use the cert it generates 
temporarily, and send them the CSR that is generated and pay them to sign 
it.  It'll cost you about $130.
