I've done a bunch of testing to try and detect and/or stop spam, and my conclusion is that this is not a solvable problem. There are a bunch of procmail filters you can put in to help (spambouncer or something similar to that) but you'll either fail to detect spam or incorrectly determine a legitimate e-mail is spam.
