There is stateful which is iptables and there is stateless which is ipchains. You can lookup the definitions on whatis.com to get more detail's on both. You only need one nic for your firewall if your using PPPoe, because the PPPoe is a virual (PPP0) adapter and your ethernet is (ETH0) Is your real interface. It's like sub-interfacing your eth0 interface.
