Whatever size the application calls for. I always create partitions with
the usage in mind.

A trick I've done many times - move some stuff from /var to /home and create
a symlink back to where it was. For exmaple, find a directory that takes
up a lot of space, like /var/spool/up2date (if you use it), move it over
to (say) /home/var/spool/up2date and then create a symlink where it used to 
be to point to the new location. It's sort of awkward, but it does work
just fine.
