I would try tunneling NFS over IPSec and possibly also tunnel that
through GRE if I needed to preserve ToS parameters. But I have no clue
as to how to accomplish that in Linux (I use Cisco equipment for that).

Sun also has a TCP-based NFS that should be possible to tunnel through
SSH quite(?) easily. I dunno if that's available in Linux as well,
tho...
