I would try tunneling NFS over IPSec and possibly also tunnel that through GRE if I needed to preserve ToS parameters. But I have no clue as to how to accomplish that in Linux (I use Cisco equipment for that). > There is also a Secure NFS out there, I don't know where, try google.
