Follow-up: Luke Crawford over on the centos-virt list intuited that my
dom0 was starved for resources. He suggested:
xm sched-credit -d 0 60000
which seems to fix the problem. I don't fully understand the issue yet,
but giving dom0 higher priority has me up and running.
Pasi, thanks for your suggestions, which helped me get further towards
the goal.
