Yes, we boot several RHEL5 servers in our Bladecenter using multipath. Some of the early versions had some limitations that if the discovery order of your devices changed the system might not boot correctly because the boot multipath was build manually, but I think this was corrected with later versions, we certainly haven't had any problems since RHEL 5.2. To install on multipath just add "mpath" to the command line when booting the install CD.
