Hi JF, You can setup MD devices within the second disk, do a cold copy, boot from the metadevice from the second disk, then setup md on the original disk and mirror the disks.
Check this link: http://www.howtoforge.com/software-raid1-grub-boot-debian-etch I did it in the past, and it worked a charm. keep in mind that if you have a disk failure with meta devices the system will boot up with a single disk and you will not have a big downtime. With LVM2 it won't.. Another advantage of MD Raid is that it provides to you an alternative boot environment, grub boots from MD and does not from LVM (at least you use grub2 which I would not until it gets standard).
