You can actually queue up all the rips and EAC will save them in a queue
and encode them all in one go when you've finished ripping.

Personally, I find that encoding takes less time than ripping (in secure
mode) so I have EAC encoding in the background while it's ripping,
sometimes with 3 or 4 encoding processes at once (on a 3.4gHz P4).
