For album gain you should either select all the tracks in _one_ album
and choose "Scan selection as album", or select tracks across several
albums and (assuming your tags are good) choose "Scan selection as
multiple albums".

If you add a new album to fb2k, there's no need to involve all your
existing albums in the replaygain calculation -- just select the tracks
in the new album and choose "Scan selection as album".

You may also want to "Scan per-file track gain" for every individual
track, which will sound better if shuffling everything outside of an
album context.  (Disclaimer: I think it depends on the file format as
to whether you can store track gain without trampling your album gain. 
I know that Ogg Vorbis stores RG values in tags; I think MP3 can work
this way but it doesn't always do so... I'm not sure what fb2k does
with it.)

I think that SlimServer has a smart replaygain application mode, where
album or track gain will be used as appropriate (depending on what
sequence of songs you're listening to).
