Any recommendations on getting EAC "set up right?"

I'd like to have a FLAC directory and an MP3 directory (for the
portable players). Somehow, I'd also like to have a "mixed" directory.
For instance, sometimes I might purchase something online and the only
version I have is mp3. In this case, I'd like Slimserver to use it,
instead of FLAC, but I don't want the mp3 in two places. Any
suggestions? Or, can I configure slimserver to use multiple
directories? Then I could have it look in the FLAC and "mp3 only"
directory and leave the MP3 directory out of it.
