To set up EAC, the best guide I've seen is here:

This way, you have separate profiles for FLAC and 
MP3 compression and can direct the FLACs and MP3s 
to different folders.

But note that EAC has many, many options.  This is 
a guide, but there may be better options for your 
particular way of doing things, and others may 
have different opinions.

although it's a little dated, particularly in its 
recommendations of command-line settings for the 
LAME MP3 encoder.  Try these settings instead:

Once you're familiar with FLAC and MP3 
compression, take a look at MAREO as Skunk 
describes, which can do both at once along with 
any other command-line function, like MP3Gain 
analysis and adjustment.
