You will need to add meta data, or tags, to your FLAC files to make best
use of SlimServer. Have a look at the WiKi
(http://wiki.slimdevices.com/index.cgi?BeginnersGuide) especially the
"Creating a Music Library" section.

I would recomend perservering with configuring EAC to do all this in a
couple of clicks per CD, it is worth it in the long run, especially if
you have a lot of CDs.

a quick google also found this guide on setting up EAC with FLAC
http://www.carltonbale.com/projects/cd_audio_extraction/ (the FLAC
specific part is down in Section 8). There are lots of other guides out
there too.
