I'd been wondering about how to tackle this issue myself and what I've done is to keep the 'disc 1 of #' info in the tag but have all discs with the same album name.
The main reason for doing this is that I'm using iTunes for management and Apple Lossless. Having ripped most of my CDs already, it's easier and faster to just select all the discs in a multi disc album together and then title them the same. iTunes then applies that single album title to every track but leave the 'disc 1 of #' tag info untouched. It's a lot faster than renumbering all the tracks and they still play in the correct order.
