There are a number of tools that transcode between audio formats and keep tag info. Probably there's one out there which will transcode from FLAC to WMA lossless and back. So you could rip into one or the other, tag using windows media player, and then convert to FLAC afterwards.
MAke sure you can batch convert lots of files at once, so you could do this easily as a last step after ripping and tagging all 800 CDs.
