The Itunes artwork issue may be because of the way that Itunes7 handles
the artwork - it doesn't just store the image files in a folder which
Slimserver could link to - but a couple of people have mentioned this,
so it may be on the possibility list.

in the same folder as the music and is named properly for Slimserver.

There are a few utilities out there that will help automate the
process, such as Album Art Aggregator, Cover Scout and Tag & Rename. 
Cover Scout may be worth looking at for you, because it can take Itunes
artwork and embed it in the mp3 file, which Slimserver should be able to
read.
