The Itunes artwork issue may be because of the way that Itunes7 handles the artwork - it doesn't just store the image files in a folder which Slimserver could link to - but a couple of people have mentioned this, so it may be on the possibility list.

There are a few utilities out there that will help automate the process, such as Album Art Aggregator, Cover Scout and Tag & Rename.
