A common way to include album art is to name the file "folder.jpg" and place it in the album folder. The name of this file can be different and is configurable from within SlimServer. Album art can also be included in the ID3 tag of the audio file itself, but I guess you would need a tag editor to do that. I use Tag&Rename which allows you to add your own album art or gets them for you from Amazon. I'm sure there'll be lots of other replies with alternative suggestions...
