Not sure I totally buy into this.

What we tend to call "Classical music" was sponsored by Kings, Princes, 
Bishops, etc. and it was popular.

No matter what time or economy, putting 50 or 100 professional musicians 
on a stage to make music is an expensive proposition. lots of salaries 
to pay, etc.

At the same time as Bach, Beethoven and Brahms, there was lots of other 
music for the unwashed masses. There have always been wandering 
musicians and singers who go from town to town, singing for their 
supper. Most of what they sang or played is closer to what we tend to 
lump into 'folk'

Guitars, Lutes, etc. were ideal for traveling singers, they could 
accompany themselves. the instruments were light enough to carry with 
you, etc.

History goes back to the 9th century Common Era for Gregorian Chant.
I assume some level of folks songs go back to prehistory.

What most people consider "rock" was just music to the poor blacks in 
the American South, until some white guys stole the songs and got played 
on 'respectable radio stations'
