Others will chime in with more detailed advice, but here are some
basics. Rip the tapes at the highest level possible without *any*
clipping. While analog tapes are usually fine in the +3 or even higher
range, you don't want digital music going over 0db because digital
clipping is very harsh. Don't bother trying to hit the range of CDs,
because that varies from label to label and especially over time
(google "loudness wars"). 

Yes, SqueezeCenter uses Replay Gain information and it's extremely
useful. Be careful with mp3gain, because depending on what settings you
choose it will either add the replaygain tags, or normalize the file
itself. You definitely want to avoid normalization. Foobar2000 is also
good for setting RG tags, as is Robin Bowes' perl script called
apply_replaygain.pl
