Configure the separator character you like to use in "SqueezeCenter Settings/Music Library/Separator for Multiple Items in Tags".
If your taggning software and music file format supports it you can also add multiple separate genre tags in the music files. I know this is supported for the FLAC format but I also think it is supported for MP3. If you use separate genre tags, only one of the genres may be shown in other players depending on if those players support multiple genre tags or not.
