I usually use AnyDVD-HD to handle the decryption (it's payware, though)
and AudioMuxer to extract the audio to FLAC.

The Gilmour disc was an exception, though...it's authored somewhat
unusually in that little of the bonus material is contained in separate
playlists.  Instead, there's a single nearly two hour playlist that
contains everything in a continuous stream.  I didn't figure that out
until I'd extracted everything to individual MKV files using MakeMKV
(also payware, though it handles decryption and makes AnyDVD-HD
unnecessary).  AudioMuxer can also extract the audio from MKVs, so I got
the same bits in the end.

Blu-rays often have somewhat convoluted authoring.  It generally takes
me longer to find what I'm looking for than it does to actually get the
bits off the disc!
