I use DVD Audio Extractor, a nice and efficient program.  It has a fully
functional free trail period, but I bought it since I do use it

I agree about the trickiness of extracting from Blu-ray.  It's not
always clear what the audio tracks are and can take a while to figure
out.  DVD-AE allows incorporation of tags during the initial rip, so
sorting out what's what is important.
