 It's a series of menus where one menu begets another with
 more applicable options.
 You need to go down the custom install path.

 Oh, and I did discover that in order to make it work, the CentOS
 installer *needs* to wipe the target partition, even if that
 partition has nothing on it at all. Not even a file system, the
 installer needs to first delete the contents of nothing, else
 it will fail.

 Fought with that for a few tries.
