Hello Rich, fro my point of view u will not have problem to increase size of your partitions also because u can mount /var/snd from nas/san so u don't need space for /var/snd.
For gnome u can try also because from the manager u can always decide which desktop run and if u find any trouble with gnome u can use xfce. But anyway wait some other answer. Regards Gabriele
