I'm not really sure what will happen if you have your database setup
for some other encoding. You might want to setup a test instance of
Roller and experiment.

I'm not sure I understand this question. Are you saying that you have
Roller data not in UTF-8 encoding that you wish to convert to UTF-8?

--> Converting from UTF-8 (data entered in a blog) to any other format
(so it can be stored in our database that is not UTF-8)?
