Just some initial comments:
1- See `desktop-file-install` command to manage *.desktop files
(https://docs.fedoraproject.org/en-US/packaging-guidelines/#_desktop_file_install_usage)
2- Also metainfo.xml files have own rules to be included
(https://docs.fedoraproject.org/en-US/packaging-guidelines/AppData/)
3- Make sure that packaging guidelines for Systemd Services are respected
