I can't speak for the web, but for what you are doing, you MUST find a copy of 
John H. White's The American Railroad Passenger Car.  Wheedle your library 
into getting a copy if you can't find it any other place.  Also suggest his 
Freight Car book for the same reason.  In both, he discusses and illustrates 
the development of appliances such as couplers and brakes, as well as the 
evolution of the construction and styling of these cars.

Essential reading for anyone scratchbuilding, kitbashing or just plain 
modelling anything pre-WW1.   (The passenger car book extends to and includes 
the streamline era, the freight car book to the introduction of steel cars.)
