SciPy and R would be good. I would ask Ondrej about cool math-physics
applications of SymPy too. The documentation of cvxopt is very scant last
time I checked. Maybe you can contact the author directly for a good
application?

I also really like the image processing examples William Stein has
been including
in his recent talks. I forget the module he used but it provides a great visual.
