Because a crafstman is still known by his tools. Since we're on food metaphors... :-) There are plenty of automatic coffee grinders on the market and you can buy pre-ground coffee. If you don't know the difference between the two, then you might not care what you're using and the big difference is that one is faster and easier to use. But, a coffee connoisseur may often prefer to use a hand-mill, if he can, because it produces the best results over the widest variety of desired brews.
