I don't claim to know much about it, but there's Capoeira, a martial art developed by African slaves in Brazil. It's beautiful to watch -- looks like a very acrobatic dance, which disguises its true violent purpose. Supposedly a lot of old African martial arts got spread throughout the world and mutated under slavery in this manner. I heard recently of something called "Jailhouse Rock", the modern form of a secret martial art once practiced by slaves in America, which (sadly) is now practiced only in prisons. There's something else in Mauritanea that was developed by slaves, too, but I don't know the name of it. And in researching my novel I ran across Egyptian stick fighting -- called Tahtib or Tahteeb, supposedly dating from ancient Egypt. It still exists in Egypt, the Sudan, and Eritrea today, although I'm told it's separated into various forms and has evolved even in just the centuries since colonization, so I figure it's probably pretty different from the original art as practiced back in the (ancient) day.
