Yep, the RJ45 on the laptop will be ethernet.  The cable is indeed for
programming a Cisco router or some such, I checked and our Cisco router has
an RJ45 "Console" port.

Just use an ordinary null modem cable between the server and the laptop.
Incidentally, why can't you just put a monitor on the server?  Is it
something wierd and proprietary?
