I recently had the load average on a mail server rocket. Although I didn't prove a cause/effect, at the same time there was bad infestation of KLEZ worm on the LAN. Fixing the virus solved the problem on the server. It turned out to be only about 5 PCs affected. Tried bumping up the logging for your MTA?
