to answer michaels querstion first, the error only happens when I copy a local
file to the NFS mounted filesystem. 
I have now set up exports/nfs mounts on both servers and the problem exists
on both machines.

I can only see how to set the buffers for the mounted filesystems and cant
find an option when exporting the filesystems which would make sense.

I have been playing around with buffer sizes and found that on the server
(which has more RAM, faster disks etc) and found that I had to reduce the
rsize and wsize from 8192 (reccomended in man page) down to 4096 to copy 
files of  ~ 48Mb ok. 
However on the other machine (my linux pc), reducing rsize/wsize to 2048
allowed me to copy a file of a few ~ 4Mb before and since then, it only
creates a file of size 790528 before giving an error. Am I reaching some
type of limit here?

As you can see from above, it is varying sizes. With the r/wsize of 8192
max size if less than 200k.
